JapaCurry
JapaCurry was founded by husband-and-wife team Masa Tanaka and Mariko Tanaka, with a shared vision: to introduce authentic Japanese curry culture to the United States.
The journey began in 2023, when Mariko—stepping into entrepreneurship for the first time—launched JapaCurry as a small catering business. Despite the challenges of building a business in a new country and operating in a second language, she focused on one simple goal: sharing the comforting, deeply satisfying flavors of Japanese curry with the local community.
Behind the scenes, Masa brought years of business and food industry experience. Originally the CEO of a supplement trading company in the United States and a distribution company in Japan, he had spent much of his career focused on nutrition and health. Through years of traveling between Japan and the U.S., he came to rediscover the value of Japanese curry—not just as comfort food, but as a well-balanced meal that naturally incorporates a wide range of ingredients and nutrients.
Japanese curry is one of the most complete everyday meals—balanced, satisfying, and deeply rooted in Japanese culture.
Motivated by this realization, Masa joined Mariko to expand JapaCurry beyond catering. Together, they built a foundation step by step—refining recipes, developing operations, and growing their customer base—before opening their first brick-and-mortar location in downtown San Jose’s SOFA Market. Today, JapaCurry has grown to multiple locations, continuing its mission to bring high-quality Japanese curry to a broader audience.
JapaCurry is not typical fast food. Each dish is carefully prepared at our JapaCurry Naglee Park location, which serves as our central kitchen, by a team of skilled Japanese chefs. Using a slow-cooking process, we develop deep, layered umami flavors in every batch. From crispy, perfectly prepared katsu to rich, aromatic curry sauce, every plate reflects the depth of Japanese culinary tradition.
In addition to his business background, Masa has also contributed to launching several restaurant concepts in both Japan and the United States as a food consultant, combining operational efficiency with authentic flavor. This experience helps shape JapaCurry’s approach—balancing scalability with quality as the brand prepares for future expansion.
